Gérard Liger-Belair (Georges Chappaz Institute, University of Reims) and Thomas Séon (Institute of Alembert, UPMC) will introduce you to the secrets of champagne.

For 15 years, we have been studying processes at the origin of the formation, rise and bursting of champagne bubbles and sparkling wines. We offer an overview of the phenomenon that accompany a typical champagne tasting, from the unblocking of the bottle, to the bursting of a bubble, through the essential role of glass tasting!
